In February we invited @michaschaefer, Head Chef of @nobelhartundschmutzig, to join us for an open dialogue at the gathering of the Top 50 Farmers inaugural cohort at @marienhof_monheim

What emerged was an enriching, unfiltered exchange between farmers and chef, where questions moved in both directions and the connection between field and kitchen became not only visible, but deeply felt.

At Nobelhart & Schmutzig, every ingredient on the plate is sourced within a 250km radius of Berlin. Here, the menu is not written in advance but is shaped by what the land is ready to offer.

To deepen that connection, the restaurant has introduced a unique chef role: part cook, part cultivator because producers aren’t just suppliers, they’re partners in a shared ecosystem.

This hybrid position bridges the gap between kitchen and field, ensuring that ingredients are not only prepared with precision, but understood at their source.
Working in continuous dialogue with farmers and producers, the team composes the menu from the ground up, aligning seasonal rhythms with culinary creativity.

“99 % of chefs start with the dish they want to create and only then think about where the ingredients come from. I take the opposite approach, I begin by asking what’s available, what’s at its best right now, and let that guide the plate.”

Did you know that Top 50 Farmers is rooted in gastronomy?

Top 50 Farmers was launched in April 2024 by the Danish nonprofit @foodprint.nordic , a hospitality-led organization connecting the food industry with regenerative farming through funding and collaboration.

Since 2021, Foodprint Nordic has partnered with restaurants, cafés, bars, and food retailers to channel funding into projects that support and scale pioneering regenerative farmers across the Nordic region.

Through this work, a clear gap emerged: gastronomy has long celebrated chefs and their creations, while the farmers behind the ingredients have remained largely invisible.

This question became central during a collaborative summit exploring how regenerative agriculture can scale, bringing together changemakers, investors, chefs, and other ecosystem actors.

Building on this shared understanding, Top 50 Farmers emerged as the next step: to elevate regenerative farmers as role models and position them with the level of recognition long associated with chefs.

The future of gastronomy doesn’t begin in a kitchen.

It begins in the soil.

Top 50 Farmers Boris Spassky and his Co-Founder Martin d’Archimbaud saw an opportunity to bring almond production back to Europe.

They secured a 25-year lease and started La Granja, France's largest organic almond orchard. Then they expanded to Spain, regenerating La Esperanza in the Ebro valley.

Being recognized as one of Europe’s Top 50 Farmers supported GreendPods in securing the confidence of investors and closing a financing round with Swen Capital.

“Farmers deserve to be recognized for their work just like we look up to athletes and movie stars.” Boris says. “For people to know about and support our work, we have to make ourselves visible.”
