On six hectares in Dronninglund, sits Omfaun.

Thomas and his family took over the land converting it to regenerative with the support of 550 egg-laying hens who rotate across fresh paddocks every two days.

It took less than 6 months to see results.

Four years ago, during Tatiana Mudráková's maternity leave, a developer wanted to build on the land in front of her family's home in Slovakia's White Carpathians.

Rather than let it happen, she and her husband Maroš bought the land themselves. It was that decision which set them down the path that ultimately became their farm, MERKUJ.

Neither had any agricultural background. Tatiana holds a PhD in Cybernetics and works in Mathematics. Maroš works in R&D. What started as wanting "two cows for healthy beef" grew into 30 hectares and 34 Aberdeen Angus, holistically managed and entirely self-taught from YouTube.

Can a small-scale organic farm really thrive on the doorstep of a major capital city?

@dun_deagh_farm near Dublin, Ireland is proving it can.

Michael Foggarty is using his 2-hectare organic farm to bypass industrial supply chains entirely. He sells seasonal fruit and vegetables directly to local chefs, at farmers markets, and through innovative community networks like the Bohemians football club climate hub.

But Dún Déagh produces more than just real food, it produces food literacy.

To combat an industrial food system that ships everyday vegetables halfway across the world, Michael opens his gates to the next generation. Local secondary schools visit to see that vegetables don't just grow on supermarket shelves, CSA members join hands-on volunteer days, and future horticultural students visit to learn the raw financial realities of running an agricultural business.

Michael doesn’t claim to have it all figured out. Having recently been forced to move locations, Dún Déagh is back in the early, challenging stages of regenerating a fresh piece of land.

Michael Foggarty never set out to be a traditional farmer. He was a restaurant co-owner managing a small market garden.

But over time, he noticed something troubling: his customers had absolutely no idea where their food came from. He felt a distinct calling to step out of the kitchen and onto the land to fix that gap in food literacy.

Once he made the choice, the universe moved fast. A short organic crop production course led to leasing a tiny 0.4-hectare field. Just four months later, the 1.6-hectare organic farm across the road unexpectedly became available. In just six months, Michael went from a restaurant owner to managing a 2-hectare organic operation.

What began as an eye-opening realization in a dining room became a full conviction.

Even when a devastating blow hit and his original landlord sold the plot he had spent years regenerating Michael refused to give up. A loyal customer who believed in his vision stepped in to offer a new tenancy, proving just how deep his community roots run.

On July 3 2021, Demetris Taliotis and wife Electra watched as a wildfire tore through one of the two regenerative olive groves that make up Aparthenasa, their 6.5-hectare regenerative olive groves in Cyprus.

What could have marked the end of their journey instead became the catalyst for a deeper commitment to regeneration. “The fire angered us but it also gave us the passion not to abandon our project and to regenerate the grove again.”

With an army of 180 chickens, the couple combines modern-science with ancient agrocraft traditions to transform the burned landscape and produce organic certified, monovarietal, high-phenolic extra virgin olive oil.

Can a 1,000-hectare farm really go regenerative?

Futura XXI in Warmia, Poland is proving it can.

In just five years, Thomas Białek converted grain fields to permanent grassland, moved 710 Hereford cattle outdoors year-round, and eliminated synthetic fertilisers, purchased grain, and ploughing contracts entirely.

In winter, the herd is moved to the poorest soils on the farm, their hooves and manure doing the restoration work. Thomas calls it ‘bell grazing.’

The fields show the difference. There is more meadow diversity, greater biodiversity, and better water retention than neighboring conventional land.

All 710 cattle are certified organic, fully traceable, and grass-fed. They are sold directly through Beefshop.pl and to restaurants providing customers with the best possible food.

Thomas doesn’t claim to have it figured out. He recognizes his family’s farm is still at the beginning of the journey.

For this reason, he shares the experiments, the setbacks, and the work in progress because he believes the ongoing transition journey is one of the most valuable things a large farm can offer the farming community.

In just five years, Thomas Białek converted grain fields to permanent grassland, moved 710 Hereford cattle outdoors year-round, and eliminated synthetic fertilisers, purchased grain, and ploughing contracts entirely.

In winter, the herd is moved to the poorest soils on the farm, their hooves and manure doing the restoration work. Thomas calls it ‘bell grazing.’

The fields show the difference. There is more meadow diversity, greater biodiversity, and better water retention than neighboring conventional land.

All 710 cattle are certified organic, fully traceable, and grass-fed. They are sold directly through Beefshop.pl and to restaurants providing customers with the best possible food.

Thomas doesn’t claim to have it figured out. He recognizes his family’s farm is still at the beginning of the journey.

For this reason, he shares the experiments, the setbacks, and the work in progress because he believes the ongoing transition journey is one of the most valuable things a large farm can offer the farming community.

After a decade of building Romania’s regenerative farming infrastructure: the Permaculture Research Institute, the country's largest urban garden network, and the first accredited permaculture university course in Europe, he took that knowledge to 6 hectares of compacted, exhausted soil in the Carpathian foothills and started Sol și Suflet.

Today, the farm runs 38 crops year-round, has trained over 350 volunteers, and is developing Romania's first regenerative farmer cooperative.

At @downlands_estate, a 280-hectare regenerative farm south of London, every animal has a job.

Chickens follow the cattle, pigs forage the orchards, and sheep graze the land in rotation, each one conditioning the soil for the next. It’s among the first farms in the UK to run a pasture-raised egg operation at scale, with 2,000 chickens working the land.

“By producing smaller numbers, but at much higher quality, and with greater variation in species, we create a system where all the animals work together in their own ways,” James explains.

Mania Castelli was born in Milan and moved to the United Kingdom at just 15 years old. After 25 years as a mixed-practice countryside veterinarian, and while raising four children, she returned with her husband, a marine biologist specialising in biodiversity and climate change, to her family’s estate, @latorrealletolfe, a 50-hectare multi-functional farm nestled in the hills of Chianti, Tuscany.

Meet Sergio Riudavets / @santodomingosc / 📍 Spain

On 1.6 hectares in Menorca, Sergio piloted regenerative market gardening on his family farm.

The results came fast.

Within a year, soil organic matter climbed from 2.8 to 3.1, and revenue rose from €4 per square metre under conventional organic methods to €17. Today, it stands at €22 per square metre.

Since then, the farm has become an example of how composting can support year-round cultivation.

Sergio has shared the farm's methods with more than 100 people through guided tours and workshops and regularly speaks on local radio to educate the public about regenerative farming.

Sergio’s twenty-year vision is to transform the farm into a regenerative reference center: a full soil laboratory, a digital educational platform with national and international reach, and eventually a seed bank preserving traditional Menorcan plant varieties for future generations.

His message to other farmers is simple: you can make a big impact from a small space.

“I’m happy to be part of Top 50 Farmers to raise awareness about what’s working for us on the island. You don’t need a lot of land to make a living from regenerative market gardening and you can feed many families while creating a positive environmental impact.”

In February we invited @michaschaefer, Head Chef of @nobelhartundschmutzig, to join us for an open dialogue at the gathering of the Top 50 Farmers inaugural cohort at @marienhof_monheim

What emerged was an enriching, unfiltered exchange between farmers and chef, where questions moved in both directions and the connection between field and kitchen became not only visible, but deeply felt.

At Nobelhart & Schmutzig, every ingredient on the plate is sourced within a 250km radius of Berlin. Here, the menu is not written in advance but is shaped by what the land is ready to offer.

To deepen that connection, the restaurant has introduced a unique chef role: part cook, part cultivator because producers aren’t just suppliers, they’re partners in a shared ecosystem.

This hybrid position bridges the gap between kitchen and field, ensuring that ingredients are not only prepared with precision, but understood at their source.
Working in continuous dialogue with farmers and producers, the team composes the menu from the ground up, aligning seasonal rhythms with culinary creativity.

“99 % of chefs start with the dish they want to create and only then think about where the ingredients come from. I take the opposite approach, I begin by asking what’s available, what’s at its best right now, and let that guide the plate.”
